I love you, Dr. Chicken Nuggets.
So they have been the freezer staple of nearly every home across America.
No wonder you're applauding.
The fail-safe food for every picky child.
And a small nugget of nostalgia for mom and dad.
But massive recalls from two of the biggest chicken nugget producers recently made headlines, along with reports that Americans are falling out of love with chicken nuggets because they are no longer perceived as wholesome.
So we wanted to know are chicken nuggets safe to eat again?
And what really goes into a nugget anyway?
Well, to find out, we put in a call to Purdue.
And in an unprecedented move, they invited us to come to their facilities to find out.
So for the first time ever, we were given exclusive access inside one of America's biggest chicken nugget plants.
We sent investigative reporter Mars Giavacampo behind their closed doors.
Take a look.
So we're in Perry, Georgia.
It's about two hours outside of Atlanta, and we're headed to one of Purdue's biggest processing facilities.
They make one and a half million chicken nuggets there every single day.
For a guided tour of the entire process.
Hi, welcome to Purdue in Paris, Georgia.
I met with Purdue food scientist Candace Schrofer.
First up, time to suit up and boot up so as not to bring any contaminants into the food manufacturing area.
They don't even allow jewelry for fear it may fall into the chicken nuggets.
The recipe starts with fresh white meat, just chicken breasts.
So no parts of the chicken that people wouldn't want to eat, like beaks or feet or cartilage, nothing like that.
No beaks, no feet, no cartilage.
Next, chicken breasts are thrown into a grinder.
The ground up meat is then put into a mixer where it's combined with a marinade.
Nothing top secret here.
So the marinade contains water, salt, pepper, onion powder, garlic powder, white pepper, all things to make that savory delicious bite.
The chicken meat is then cut into shapes, just like with a cookie cutter.
Those pieces are then floured and breaded.
Just like whenever you're making fried chicken at home.
Flour based first step, you use a wet step next, and then finally with that dry bread crumb to create that crunchy bite.
Once coated, the nuggets are put into a fryer to partially cook in vegetable oil.
Frying creates that crispy golden brown coating.
Then the nuggets go into the oven.
And throughout the entire process, workers inspect nuggets for foreign material.
Earlier this year there was an issue.
There was a recall because there was wood found in some of the products.
How does that happen?
Uh we just chose to pull product out of the marketplace after consumers reached out to us and let us know there was a challenge.
Um and we continue to investigate our process to make sure that we can really limit that from happening ever again.
Coming out of the oven, nuggets go into this machine where they're instantly frozen.
Afterwards, they're bagged, boxed, and ready to be shipped.
Of course, the real test of a chicken nugget is how it tastes.
And here in Purdue, they take that very seriously.
They taste test their chicken nuggets, not weekly, not daily, but every single hour.
This testing is handled by Purdue Vice President Jeff Shaw.
Associates come in of different levels and they sample our control product, which is our best in class versus what actually ran in that hour.
And if there's any difference, that product gets placed on hold.
So we want to make sure the color of the breading matches our color scale.
So you want to what are we?
We're looking for three?
Between a two and three.
Okay.
So that would comply with it.
It's right at three, yep.
The next thing when we break it open, we want to make sure that it's got a nice tight meat block.
Okay.
Right?
And then the lastly, we get to eat the product and make sure it's juicy and flavorful.
Okay, so this is the control.
This is the standard.
That is the standard.
All right, let's do it.
So now we compare it to the batch that was cooked today.
The batch that was cooked today.
Okay, this one looks like it's like shimmering with some grease, which is a really good, like I love.
I love it, yeah.
I think they're a winner.
Same, same.
Same.
Then we win.
So these are good to go.
Good to go.
Mara joining us now as a mom.
How did you feel after you left the plant?
You know, the recent recalls that we've heard about across many brands have been very concerning.
These reports of foreign material found in the nuggets is scary.
And in Purdue's case, as we heard, their recall was due to reports of wood found in the nuggets.
So I did ask them directly about that.
They addressed it directly.
They said they conducted an investigation.
They concluded the only possible source were wood pallets used in the manufacturing floor.
They have now replaced those with all plastic.
So that was comforting.
And being there, you do see how seriously they take safety.
You have to cover your entire body.
Men have to wear beard guards.
You can't wear any jewelry.
You even have to have your boots washed when you go in with like this almost like an automated shoe car wash.
And when you go from the cooked food area to the raw food area or vice versa, you have to completely change your clothes again.
They take it seriously.
That was very comforting to me to see that.
Alright, so we all learned how the classic nugget is made, but there are some chicken nugget innovations coming out from the major manufacturers.
Please, Mara, walk us through some of the popular new offerings, what we ought to know about them.
I want to start with something that I suspect it was gonna come eventually.
It's gluten-free nuggets, because everyone's talking about gluten-free.
Yeah, so this has to do with the breading on the nuggets.
So what they've done is they've coated them with a mix of rice flour and corn flour.
So they've eliminated eliminated the wheat flour, which is the source of the gluten.
So this is a great thing if you're trying to avoid gluten.
Now do keep in mind we looked at several brands.
We found that in a lot of cases the serving size is smaller.
So if you're comparing apples to apples, you may think, oh, look, less calories, less fat, less carbs, but it might be a smaller serving size.
So just pay attention.
Head fakes can get you here.
Yeah.
And whole grain breaded nuggets, and this caught my attention.
What's the difference between this and what we used to get?
Yeah, so this again is in the breading.
That's where we're seeing a lot of these changes being made.
And they're using whole wheat flour, which is a great improvement.
We are moving closer to the natural state of the food.
But in a lot of cases, they're mixing whole wheat flour and refined flour.
They're mixing them together, and ultimately the nutritional difference between these two flours is very, very small.
Still a step in the right direction.
Alright, so a season of small steps.
This one, the next one, it may be a big step.
There's a lightly breaded nugget section now that's available in most grocery stores.
How do they actually do that?
This is my favorite.
I love this because it's everything you love about a nugget, but with a little bit less breading.
So there are actually USDA mandates about how much breading a nugget can have.
So to have it be considered a nugget, it has to be 30% breading, no more.
If it has any more than that, it's considered a fritter.
Oh.
It's good.
It's a different kind of food altogether.
So with the lightly breaded ones, they have to be 15%, which is half.
This is a huge difference because you're cutting the breading in half, essentially, which is making it a much healthier product.
And percentage-wise, more protein for that reason.
Okay, now that excited you, and I understand why.
This excites me.
Chicken nuggets with hidden vegetables in them.
Yes.
Kids are so difficult.
So picky.
For me, grandkids, and they're very they know everything, they're so smart.
This is a good way to sneak in some nutrients.
This is a great way to sneak nutrients to your kids.
They don't have to know it's healthy for it to still benefit them, right?
So they'll eat it, they'll dip it in their ketchup, they'll love it, and it'll cut down on the wining at dinner.
Now I love wine at dinner, but not that kind of wine.
That kind of wine.
Not that whining.
So in order for these to be a win, kids actually have to eat them.
They have to put them in their mouth.
So we put them to the test with one very picky three-year-old.
Take a look.

Johnny, we're gonna try a new kind of chicken nuggets.
Can you take a bite?
Now, Johnny, what if I said there were vegetables in that chicken nugget?
No way.
You don't believe me?
No.
There's cauliflower in there.
Wow.
They're all make it up.
Yeah, they put cauliflower and chicken and mixed it up and put it in a nugget.

What is rib meat?
Fingers, tenders, nuggets.
What does it all mean?
What does it all mean?
We're all being fed chicken nugget myths that lead us to doubt our choices.
So Marsh Cabacampo is back to bust them.
The first myth is the shape of the nugget will tell you how processed it is.
True or false.
This is absolutely a myth.
Unless the nugget is made from one solid hunk of meat, it is going to have to be formed into some kind of shape.
It's basically like a meatball.
But here's the thing: a lot of restaurants know that people think that the cutesy shapes are artificial.
So they will mimic the variety that is found in nature with these seemingly random shapes that are not random at all.
You have the ball, the boot, the bone, and the bell, but when you throw them all together in a basket, it gives people the impression that this is a natural cut.
This is no different than the dinosaurs.
They actually named it.
They have a name, these consistent little shapes that are supposed to look happens.
Alright, so there are some nuggets that are truly cut straight from the breast.
So how do you know if it's just some form, like you said, it's a meatball of chicken versus literally cut in shapes from the chicken breasts.
Yeah, if you're at a restaurant, it's a little bit harder to tell.
But if you're buying them in the store, there is a very easy way to tell because there is a legal requirement that food manufacturers have to print the information on the front of the bags.
And it will say that they are breaded-shaped chicken patties.
Now, this is not a bad thing.
It's just telling you it's not made from one solid hunk of meat.
All right, the next myth is really big.
The rib meat is filler.
That's a big issue, because I've seen ribbed meat.
I think I probably speak for most Americans and thinking, well, chicken breasts, chicken breast, and they add something else to it.
But what is ribbed meat?
I have no idea.
Okay, so rib meat is not an additive or a filler.
It is a natural part of the chicken breast.
Chicken breasts actually come with this extra hunk of meat attached.
It's this kind of ragged piece of meat.
It helps attach it to the rib.
This is actually very flavorful.
It's very high in fat content.
People love it.
So this is not an additive or a filler, it's great and it's tasty.
All right, next myth has to do with the difference between chicken nugget fingers and tenders.
Nuggets, fingers, and tenders.
So please walk us through the tender versus finger.
I think the nugget we're getting pretty clear on.
Yeah, so the nugget is basically like a meatball.
It's ground meat, spices, you bread it, you cook it.
The chicken fingers are strips of the breast.
So this is where we're talking about these whole hunks of meat.
This is a whole strip of the breast that's cut and seasoned and fried or baked, what have you.
Chicken tenders are different.
These are a specific part of the chicken breast.
It's called the pectoralis minor or the inner fillet.
It is a really tasty, specific hunk of meat.
It's this.
And that is what the tenders are made of.
Now watch, see, I'll touch on the side you can see it.
It's actually attached here.
Do you see that?
There's a little fascia.
But you see, it actually has to be cut away, but it's naturally adherent.
And I think you ought to remember this because I had no idea.
I thought I really thought a chicken tender was just another way of saying a chicken finger.
I always noticed on menus chicken tenders were more expensive in my experience.
So I assumed it was better quality.
Now we know why.

Yeah.

And you guys were talking about some pretty deep stuff.

You're no longer together.

How was that?
Um, you know, it was a sad and hard time, but you know, it turns out it was for the best.
Um, we're still really, really good friends, and we um co-parent our five five-year-old son beautifully together.
And um, you know, we started off as friends anyway before we got married, and we had to go back to that.
And so it's all good.

It's walk me through this.
So we were together 16 years, if I have it right, right?
And he was managed in the business a little bit, so you met that way.
Yeah.
But it it does change your dynamic a little bit when you're in love and having babies together, and then you're not together.
Yeah, well, you know, it was a lot of blurred lines.
Working together and being married is hard.com.
You know what I mean?
And uh it was never a time when we could like just work or just be married.
And you know, I felt like he and I deserve to just be married, you know, and so now we are just Tamar and just Vince.
And how how is Jess Logan your son?
Oh my gosh.
Doing so he spends partly with you and partly with Viz?
Yeah, he he's amazing.
He's amazing.
He's five years old, he's in kindergarten.
Oh gosh.
He's five going on 40.
Uh, he looks like Vince, but he acts just like me, which is a blessing.
So, yeah, he's he's my most prized possession.
He's amazing.
So the first time I realized there was something going on, you shaved your your head.
Yeah.
Which I I gotta make a statement about the new independent version of you.
Well, no.
What happened was it was the week of my birthday of last year, and I just wasn't happy.
We were already um separated, not living together, going through the divorce.
And it that that wasn't what was not making me happy.
I found out I wasn't in love with myself.
I had to wear wigs, I had to have clothes, I had to have jewelry.
And so I decided by any means necessary, I will fall in love with myself.
I want to fall in love with myself and I wake up in the morning no matter how I look.
So I shaved my head and I stopped wearing jewelry for a long time, and here I am.
So why do you think you weren't in love with yourself?
There's a lot of love with you.
Well, well, you know, I was going through a lot.
And sometimes, you know, when you're in a relationship with somebody, um, you lose your identity, you lose yourself, and you forget the things that you like and the things that make you happy.
And I was just on a quest for happiness, and here I am, I found it.
What makes you the happiest of all the things you do?
What gives you the greatest joy that reminds you why life is worth living?
Oh, my family.
My family, and knowing that I can turn to them and go to them at any time.
And although we might fight and argue, they're still my family, and they're gonna always have my back, and I'm gonna always have theirs.
Well, you guys have thrived together, and you have fought together.
Yes.
And family uh the Braxton Family Values is, I think, really cool because it shows you know you can fight with like cats and dogs, and so figure things out.
And of course, includes your superstar sister Tony and your mom, who I just your mom is probably the biggest star of all.
Yeah, she's amazing.
The make all of you and hold you guys together.
Absolutely.
So the the sisterhood, what's it where's it gonna take us this year?
What's the what's the biggest?
I saw the last show last week was just fireworks.

Uh well, you know, this is probably my favorite season outside of the first and second season.
Only because um it reminds me of the times that we had we had absolutely no worries, no one was stars, and it was just sisters.
And that's how we feel about each other now.
It's all about us being sisters and us being friends to each other.
Of course, we're gonna have our days and we argue, but I just feel like um what we went through the past two years.
We went through that because that's what God wanted us to do, to realize that we really need each other and we really have to lean on each other.
And so that's a decision that we made on our own.
What do your siblings give you the hardest time over?
Well, believe it or not, my mouth.
But impossible.
But I've gotten better, you know.
I'm like, oh God, right on my tongue.
And only when somebody asks me something is when I give my unsolicited advice.
Yes.
Nobody asks me, but I they asked.
You have found a new love.
I'm just curious.
He's here actually.
Where's this guy?
Where's David?
There he is.
There's David.
Handsome too.
Yeah.
So does David ask you for your unsolicited advice?
Uh no, he gives me his, which I probably meant meant my match.
Um he gives me his, but he also has great advice.
Um, he's not in the music industry, he's not in the television b business.
He's in the financial business.
And, you know, um, he gives me a lot of tips.
He's really, really smart and really helpful.
And also he's a family guy himself.
He has a big family himself.
And so family means everything to him too.
So he tells me to hush when I need to acquire the spirit of the hush.
Yeah.
Good for you for doing that, Dave.
Have your sisters met him yet?
Yeah, they've met him.
My mom met him.
They absolutely adore him.
They do.
They adore him.
I bet that was intimidating for him to walk in there.
Um, no, because he has a big family too.
So he has a bunch of sisters as well.
So he's used, he's used to the sister stuff.
What's different in the relationship with David?
Um, besides the fact that it's new, and of course, everything's amazing when it's new, but um, I feel like we really understand each other, and we really try hard to understand each other, and we have a lot of trust.
We can talk about anything, even things that are uncomfortable, we can talk about it, and it's all good at the end of the day.
So the new season of Braxton Family Values, there's a lot of family drama.
Yeah.
Uh I know you can't give it all away, but what should we be expected to be surprised by?
Surprise, I don't know, because this is the Braxton.
So well, my sisters and I go through a lot, especially when um Gabe um died um out of the blue, and it was a really tough time for my family because he's the first person that was so close to us to pass away.
And um, we had to really um come together and um build a love wall around Trina and make sure she's loved on which now she's engaged, because I don't tell everybody by mistake.
I didn't mean that.
She's engaged?
She's it, yeah.
Yeah.
You like him?
So I guess I told everybody now.
Yep.
Yes, you have to tell everybody.
Yes, I do.
You know, she's been through a lot, and to find real love again um for both of them is so so amazing.
And he's an amazing guy, too.

A couple years ago you came on here.
We were really worried at the time because you had a big pulmonary embolism.
Yeah, I did.
It was so scary for me.
You still get afraid when you get on planes.
I still get afraid all the time.
Every time my voice gets hoarse or I have a cough, I feel like I have um uh a blood clot.
So this pulmonary embolism, uh, just to get everyone on the same page, is when blood clots in your legs, but you don't move around a lot, it tends to happen.
And then it flies to your lungs.
And a lot of people don't realize you're having it, which is why you get shortness of breath.
It's big enough, it can kill you.
Yeah.
And yours was big enough.
It could have killed you.
Yes.
Yes, it could have.
So the other time uh thing I want to talk to you about was your diet.
Yes.
Yeah, you're very honest about it.
Yes.
You taunt me a little bit.
She has a love affair with pizza.
It's her favorite food.
How's that working out for you, by the way?
Well, pizza and I broke up.
You did.
Yes, we did.
Separated.
Well, yes, we were separated, happily separated right now.
Well, David is a vegan, and so he's influenced me, like in a very positive way to eat more healthier and eat fruits and vegetables because at first I hated fruit.
I could not stand fruit.
Only thing I would eat is a banana, and that don't really count.
You know what I mean?
So now I eat a lot of fruits and vegetables.
I don't eat as I don't eat as much as meat as I used to.
Are you cooking still?
I'm definitely still cooking.
What do you like to cook?

What do you would you like to have?
I like pizza.
No can't make that.
Vegan pizza I can do.
I like vegetables because vegetables sometimes take a little more effort to make.
Yeah, a good stir-fry is amazing.

It's amazing.
So in all the middle of that, you're very active so on social media, and I saw this image of you.
She posted very beautiful feet, but they're a little bit swollen.

This is the result of me being in Atlanta.
I can't even walk.
My feet are so swollen.
Oh, yeah, California people know what I'm talking about.
I can't come here because it's gonna kill me.
So what happens every time you're in Atlanta, you say it's gonna kill me.
What's different about Atlanta from LA?
I just feel like the salt is on overload in Atlanta.
And I love it, and I love Southern food.
I you know, I grew up on it.
And so every time I go, I I feel like my whole body swells.
I feel like they put salt in the salad, salt in the smoothies, salt in everything.
Yeah, but you you talked about lemon pepper.
You just call it lemon pepper.
Yeah, lemon pepper wings is a staple in Atlanta.
You have to have it.
Yeah, but she does lemon pepper.
She means lemon pepper wings.
But wait, but this that you know, you can eat things that don't have a lot of salt.
That lemon pepper wing deal, it does have a lot of salt.
It does, but I feel like everything has salt in it in Atlanta.
It's the South, for God's sakes.
Well, since I spent a couple years of my life there, and I know that in Atlanta, you know, gravy is a beverage.
Yes, it is.
So come over here.
I'm gonna show you something.
Okay.
Little hack next time you go down south to Atlanta.
This will help you eliminate some of that salt.
So a lot of people don't realize it's not just about cutting out salt.
You want to replace salt with something else that pushes it out.
So I've got a little smoothie for you.
Potassium, magnesium are the perfect minerals to balance these out.
So you're a smoothie fan, I hope.
I do like smoothie.
Give us a taste while I describe magnesium in the spinach.
You got a lot of potassium in the melon, the banana.
Coconut water has potassium.
And I even put some dates in there, make a little sweet for you.
Right?
This is a tamartonic.

Give it a shot.

I don't like dates, so we'll see.

When my feet were swollen, I was at my mom's house, and she told me to do it, and I didn't listen to her because I didn't believe it.
I was like, why am I putting my feet in salt if I'm swollen from salt?

I didn't get it.
This is the youngest daughter syndrome.
Your mother must be so frustrated sometimes.

It's called the triangle of death.
And I want everyone to know where it is.

Most of you don't go, because the triangle of death is on your face, right?

So, Dr. Lee, the triangle of death, I'll kneel down here, is a triangle that goes from the edge of your lips up to the brow of your nose.
Right?
And there's blood vessels back there.
And those blood vessels, they don't have any valves in them.
They're veins that drain right to the brain.
And because they connect to the brain, guess what?
If the body's unable to shut up an infection because there's no valves in there, all the bad bacteria pour in there, and then you get these really horrible infections.
Ones that aren't so easy for us to deal with.
So we don't want to pop pimples in there.
It's rare, but it happens.
Right.
So what do you do if you have a big pimple from the brow of your nose down to the edges of your lips?
I mean, I think it's really important to keep in mind when you do have a pimple in that area to really not touch it, or see a dermatologist who can inject it with a little steroid and help it calm down and go away quickly.
When you were a little girl, would you pop pimples in there?
You know, of course, we all do, we all do something.
But now that I know, I stay away.

Well, I've always been a foodie.
I love cooking from a very young age.
And um, so I first discovered food ASMR because it's actually a combination of two trending genres I really enjoy, which is the whispering ASMR and the Korean food trend called muang, which is essentially sharing a meal on camera.
So why do you think so many people are drawn to this trend?
It's it's really remarkable.
I think it's the sort of like rhythmic movement I use, like the the way I use my chopsticks or how I twirl my noodles.
They find it, it's almost like they can they can just relax and shut off their brain and just enjoy the sounds and the visual.
