So today, we're getting to the bottom of this.

Yes, we have to tell everybody that there is no regular bacon.

Here to get to the bottom of America's biggest bacon fear is butcher Matthew Katakis.
So whether doctors like it or not, bacon is everywhere.
How did they become America's favorite food?
Well, believe it or not, Dr. Oz, our obsession with bacon isn't even a century old.
It goes back to the days when bacon and pork was a peasant food.
So it was cheap, readily accessible and available, became a staple of our diets.
Fast forward to World War II, there was so much bacon that the US government was asking Americans to donate the bacon grease and the pork grease to be used as explosives and bombs during the war effort.
Are you kidding me?
No.
Oh my goodness.
That's what was going on.
And then in the 90s, America became even more obsessed with pork when bacon was put in everywhere.
Bacon cheeseburgers, bacon-wrapped avocados, bacon-wrapped everything.
So, guess what?
We're a bacon-loving nation.
We got bacon-infused cocktails here.
That's right.
I don't know if they're any good.
All right, here's the thing, guys.
Americans eat 18 pounds of bacon every year.
To put it in perspective, we eat 15 pounds of fish as a country.
So, it's a lot of bacon.
Now, you argue there's a global increase in the demand of bacon.
It's changed everything, and that creates a potential for shortage.
So, what went down?
Well, let me tell you, Dr. Oz, the Chinese market is one of the largest markets for pork consumption.
In fact, the Chinese consume 88 pounds of pork per person per year.
That's a lot of pork compared to Americans.
Four times more than us.
More of...
Right?
And what's going on there is the swine flu epidemic has hit, and therefore, the Chinese are looking to us for their demand.
And guess what?
Prices are probably going to have to go up a little bit.
So, we're going to have to have some storage, I gather.
Is the storage that we have adequate?
We've fallen behind.
Are we going to really literally have a bacon shortage?
I saw that kid crying in that video earlier.
Well, not to worry, Dr. Oz, because America's a stockpile nation.
After World War II, we didn't want to run out of anything.
So our stockpiles of pork bellies are up 34%, the highest they've ever been.
I love it.
All right.
So let's get into production for one second.
I want you all to understand this.
How long does it take from the moment the little piglet is born until you have bacon?
Well, if we start with a 50-pound pig in, say, May, it'll be ready for production around November, so seven months from start to finish, and then what happens is the carcass is sent to the processing plant, the belly is removed, it's cut and sized, and it's cured or brined for flavor, then smoked for three or four hours, and then finally sliced and packaged and sent to your supermarkets and grocery stores.
So what I'm getting clear is we can take a deep breath, sigh of relief, we don't have a baking shortage, but I gotta, so it's not disappearing from your shelves anytime soon, got that.
But the price is what I always worry about because as soon as people start thinking there's a shortage, both the people making the pork and the people buying the pork begin to bid the price up.
So are we looking at increased prices?
Well, first things first, we're good till 2025 when the Chinese will be able to come back.
Yeah, come back from this shortage, right?
And they'll be able to catch up with their production.
In the meantime, though, maybe it's time to take a bacon break, like I was saying, because even though it's tasty and good, it's become such a staple that maybe we should treat it as a treat again.
I mean, I'm a butcher.
I love bacon.
But maybe we should be worrying about our hearts as well.

It's a keto and paleo hero, but troubling reports about a potential shortage have sent bacon lovers into a panic.
So what's the next best thing to bacon?
We're about to find out if we can fake the bacon with bacon lovers Sue and Paul, two members of my audience who adore their bacon.
So Sue, how much bacon do you have in a week?
I probably eat bacon a couple times a week.
I'll use it in recipes for my family or as a side.
And family all loves it too?
Love it.

You trained them well.
What's your biggest concern about replacing bacon, Paul?
So that was my father on that video, the old guy.
Turning around?
Yes.
Hilarious.
Yeah, so he's 97 and he knows what's going on, so he loves real bacon.
So if I try to slip in something else, that might not go well with him.
I love the response.
He went, what?
And then he cursed.
Yes, he did.
Yes, and he was complaining that the bacon I bought him was too thin, so I failed on my grocery thing.
A real cut of syrup.
Oh, he is.
So, here's the deal.
I'm going to send both of you off to have a blind taste test.

You head that way, I'm going this way, because I enlisted butcher Matthew Katakis to bring us the best bacon alternatives out there.
I know from years of experience...
And I mean, I've been trying this a long time, right?
Not to tease my pork bacon lovers with turkey bacon.
So I'm not throwing turkey bacon out.
I'm throwing out beef bacon.
Beef bacon.
What do you think as a butcher?
Well, Dr. Oz, let's be real, okay?
Beef is beef and pork is pork, and the flavor's not gonna be the same, but let me tell you, okay, there's less fat in beef bacon, so I know you're gonna love that, okay?
I do.
And the other thing is, it's not gonna cook the same, so it's gonna be a little bit less crispier, it's gonna need a little more time to render the correct way, and it's gonna need a little bit of fat in the pan when you're frying it up.
So, some butter, some olive oil, something just to get that crispiness There.
You know the anatomy as a butcher.
It comes from roughly the same place on the cow as we get the pork belly from the pig?
The steer.
And it's the short plate of the animal as you can see in the graphic.
The short plate which is roughly by the belly, not quite.
We call it the navel and the steer.
So yeah, that's the general area.
All right, so you can get it packaged, right?
That's right.
This is the packaged version, easy to acquire, and then this is if you go to your butcher and get it.
Is there a big difference between the two when they're done?
This is a little more processed, and this you'll see a beautifully marbled, lean piece of meat.
I prefer the one we actually cut, and you can taste the difference there as well.
There's a difference, but I gotta say, both of these are better than I expected.
Yeah, hey, you know what?
We actually have to wean ourselves off that bacon and get into some healthier options.
130 calories, 7 grams of protein in two slices, and it's only $6 per package.
That's right.
So, worth considering.
That's correct.
I see if you don't like turkey bacon.
Alright, next up, salmon bacon.
Hold on, guys.
I know what you're thinking.
Next it'll be kale bacon, right?
Tell us more about salmon bacon.
Well, let's begin with this.
Salmon is salmon.
Now, the beautiful thing about it is there's smokiness.
It's smoked.
So when you get it from the package and you remove it, you throw it right into the pan.
It cooks kind of the same way.
It doesn't really need that much fat.
And guess what?
It has a beautiful flavor.
I kind of like it.
You know what?
And it's pretty good.
I gotta say, this is stunning.
Yeah.
There are you naysayers out there.
Now, I gotta admit, it's pretty pricey.
It's the price of your bacon alternatives, but it's also the healthiest.
40 calories, roughly $17 a pack.
It's gonna be a problem.
But, you know, if you're having a luxurious meal with some friends, not a bad thought.
Almost the same amount of protein as regular bacon.
The added benefit is omega-3s.
Right.
So how would you use salmon bacon?
You know what?
Throw it in a salmon, lettuce, and tomato sandwich.
Throw it into a salad.
Throw it into anything.
I mean, it's great.
I love cooking it up in the morning with some scrambled eggs.
It's amazing.
Well, I'm sold on this.
I never expect that.
All right.
Next up, the piece de resistance, the vegan bacon.
I mean, who would ever think you'd put those two words together?
So what is in vegan bacon?
Well, guess what?
Plant-based everything these days, right, Dr. Oz?
So it starts with wheat gluten, and that's what's going to give it the texture.
And there's all these other elements.
There's some whole wheat flour, water, soy sauce, but the pista resistance is the natural hickory smoked concentrate that's gonna give that smoky flavor to this vegan bacon.
You know, once you give it that flavoring from the hickories you mentioned, you can get a lot of things past people.
This texture is not bad compared to the beef, right?
You can tell the beef's different.
This should be a little hard-pressed.
All right, 125 calories per serving, 12 grams of protein.
That is more than some of the animal meat bacon.
That's correct.
So what does it cost when you find it?
Guess what?
These days, again, with the plant-based phenomena that's happening, you can find it pretty much everywhere, and it's the cheapest alternative.
It's like $4 a pack.
I think we got something here for everybody.
All right, tasters, it's up to you.
We presented the good news to everybody about the options out there.
In case we don't have enough pork bacon, and Paul Paul, if you can get your dad past this, which of these would you recommend to him?
Oh boy, I think probably the beef, simply because it has the mouthfeel of real bacon.
You know, it's got that chewy texture.
You can see the fat.
I mean, he can't see really well, but let's, you know, we'll go for that.
It's salty, it's, you know, smoky.
I like that.
Number two, I like the salmon a little bit.
I think that he would like it simply because he likes salmon, but I'm gonna say beef number one.
Sue, what's your thought?
And compare them.
So I agree.
This has nice crispy feel to it.
Feels just like regular bacon.
But I really like that salmon.
It's got super sweet.
Not overly sweet, but it's nice and salty.
I think so too.
Sweet.
And I think it even thinner might give you even more of that texture that you like in bacon.
You're both happy though.

Now today, we dive into one of the biggest claims that I keep hearing about.
Can CBD help your pain?
Investigative journalist Marskevacampo is here with the results.
Now marijuana has been prescribed for pain due to cancer.
Lots of things actually.
And now CBD, which is a compound of cannabis, is being touted for pain as well.
So walk us through these claims, because they're all over the place.
Yeah, there are a lot of claims that CBD is very effective in treating all kinds of pain, from muscle soreness to joint pain to inflammation to all kinds of chronic pain.
Some even take it a step further and say this can help you recover from injury faster.
And CBD is described as having certain compounds that will interrupt those pain signals.
Let's walk through some of these CBD products and there's a lot of opportunities here to help, but these CBD products are interestingly diverse.
We've got ones that you ingest.
Let's start with those.
So there are a wide variety of CBD products that you would take orally from tea to candy to good old-fashioned pills, but there's also a wide variety of doses.
So it goes from as low as 5 milligrams to as high as 30 milligrams and this is a Big gray area.
It's not like acetaminophen, where you know exactly how much to take if you have a headache.
With this, you are just guessing.
And sometimes with the tinctures, I mean, half a drop off and you're dramatically changing the dose.
It says one drop, but what does that mean?
The whole dropper, a big drop, a little drop.
It's very confusing.
All right, over here we've got the ones that you apply, topical products.
Yeah, topical products, big segment of the industry, and that ranges from creams to balms to cooling sticks.
They even have bath bombs that you can throw in the tub and soak in.
But just like with the oral products, there's really a lot of variety in the doses.
So, like the doses, the prices are all over the place.
We found some products as low as $8.
We found some as much as $150.
How can the same products range in that much of a round?
I mean, what if footballs cost $8 to $150?
In some cases, it is very, very expensive.
Here's the thing.
CBD is not subject to federal regulations.
Remember, this is a supplement, not a drug.
So the companies can really charge anything they want.
That can be marketing.
It can be hype.
Now, in some cases, the price does reflect higher quality, a company that's using much stricter production standards, but not always.
Well, that's the thing that's confusing me the most.
And then, of course, people want to get the lower-priced item because it's more affordable.
Yeah.
And they're actually often wasting their money.
So you wanted to test some of the products out.
So we had this brainstorming.
We decided, We'll just use Mara to test it out.
Why have a third party do it?
We got the kitty pig right here.
So what kinds of aches and pains are we going to treat on you?
Yeah, I was happy to do it because I do have things that bother me.
So I have lower back pain that's been recurring for years.
It's from an old sports injury.
And my knee now has also started bothering me.
So with my back, it's generally after I've been laying or sleeping for too long, it gets very tense.
And sometimes after certain workouts.
Join the club.
I've got both of those.
Most of the audience probably does as well.
So Mara decided to try CBD products for three days to see if they would help her with her pain.
Here's her video diary.
I wanted to find out which CBD products would best help me with my lower back pain.
I decided to try three products over the course of three days.
A balm, capsules, and mouth drops.
Day is day one and I did wake up with some soreness on my lower back, which is actually pretty typical.
I've been laying all night and it just tends to get sore.
My knee is not bothering me yet.
That tends to get worse as the day goes on, but I'm going to get started and we'll see how it goes.
So it's been about an hour and I will say I was super skeptical.
I didn't expect it to do anything but my back really does feel better.
It feels really loose.
It just doesn't have that like tightness and that pain that it had when I woke up.
It's day two and today I'm trying the capsules.
I actually do have quite a bit of back pain today because of a workout I did yesterday.
So it says take one to two capsules twice a day.
So it's been a few hours since I took the capsules and I'm really glad that it is a weekend because I am definitely feeling a little bit loopy, a little bit lightheaded, just it feels like I've just had a glass of wine or two glasses of wine.
So I'm getting ready to go to sleep and I'm definitely still feeling a little bit out of it, but I just realized I haven't thought about my pain all night.
It's day three and today I am trying the drops.
So these are water soluble and I'm going to put them into my shake this morning.
As I'm getting ready to mix this I'm realizing the dosing is a little bit of an issue.
The bottle says use three drops but that's not very scientific.
The other thing is it does not smell good.
Let's see how it tastes.
Tastes like my normal shape, so that's a good thing.
So it's been a few hours since I had my shake and I don't feel anything.

Today's question, could CBD help with pain?
Investigative reporter Mara Skava-Campo was back and Mara decided, God bless her, to try three categories of CBD for three days to see if it would help her with her back and knee pain.
Two very common problems.
Alright, so you had a CBD mouth drop, right, that you can add to your drinks.
That's right.
Tasted okay, but at 90 bucks, it should've tasted great.
Yeah, very pricey.
Pricey, right?
Then you had a topical balm.
These are pretty popular, 65 bucks.
Pretty expensive for a balm, too.
I guess all these things are expensive.
And then for only $30, you had these gel caps.
Yeah.
So, none of these are cheap, but this seems like it's a difference that's big enough to To influence your decision.
Yeah, but you have to keep in mind quantity.
You know, you say only 30 bucks, but this is about a week's worth.
This drop over here, this is $90, but this supply is going to last you much longer.
So you have to take that into account.
So either way, there's a good chance you're going to be paying a reasonable amount.
It's expensive, there's no doubt about it.
Then the question is, does it work?
So I trust you.
I've seen you do great work at many levels.
This is one of the hardest questions to answer because the studies just aren't well done.
And I think a lot of that is because we've prevented companies from doing the studies and how we've regulated CBD and marijuana and the like.
But in your opinion, Did these work?
Did they not work?
Thoughts?
Yeah, so I have very strong thoughts about it.
The drops, I felt, did not work at all.
Now, to give them the benefit of the doubt, I may not have used the right amount.
That's where dosing comes in.
The dosage was very unclear, so maybe I needed to use more.
The balm, I felt, did work.
I did feel better, but I'm not sure it's because it was CBD. It just felt really good to rub a balm into my lower back.
If you had gotten your husband to do that, for sure it would have helped.
It definitely would have worked.
This could have been olive oil and I think it still would have felt really good.
So I'm on the fence about that.
The gel caps were absolutely effective.
And I would argue strenuously that it was not the placebo effect.
They worked so well that I forgot about my pain.
The one thing is that they did make me a little loopy.
So if I would have taken them say on a work day, come here to try to do the show, I might not be able to perform so well.
But they're not supposed to make you They're not supposed to.
And I kept checking in with myself, saying, am I really feeling this?
There was no question about it.
It felt like I'd had a couple glasses of wine.
All right, so we're bringing pain specialist Dr. Sonia Balani, who can help shed some light on this.
What do you make of Amara's results?
Please address the fact that she didn't get any benefit from at least one, in her opinion, but could she really get loopy from CBD? So first off, I think Mara's experiment kind of shows us how not all CBD is made equal.
And we know that, but particularly in terms of one thing that you touched on was dosing.
So here we're dealing with almost three milligrams and there we're dealing with a compound that's 50 milligrams.
So we have completely different dosing.
It was a 17 times difference.
Exactly, exactly, which can definitely account for a change in her symptoms.
In addition, we're dealing with three different formulations.
So we have one product that's a mouth dropper, we have another product that's a balm, and a third that's a gel cap.
The way that our body absorbs and actually metabolizes these different ingredients can also affect as to why you had a better effect with one and not with the other.
This loopiness question, just help me with that.
Is that feasible?
So theoretically, CBD does not have any psychoactive effects to it.
That having been said, a great point that Mara made before was the fact that it's not regulated the way other medications are.
So often times there can be other parts of it, other substances within this compound that we don't actually know if it's actually having an effect on you.
So Dr. Balani, there have been some early studies with CBD in pain.
What did they find that happens in our brain when we take CBD? So the most recent studies were done in animal models and what it found was that there's actually cannabinoid receptors within the brain.
Now when these receptors are activated it actually causes a cascade throughout our body which changes our perception of pain.
So for patients who might have an aching neck or that joint pain in your knee or that pounding sensation of a headache it can help to alleviate that.
So I need someone to give our audience their professional advice.
You're right in this space.
Do you believe there's a potential for CBDs to be prescribed for pain in the future and be effective enough that it might replace opiates and some of the other things we use?
And I think that's such a great point.
I think as clinicians who treat pain, we're always looking for other treatment strategies because of the fact that this could be a potential medication that carries low risk and a low side effect profile.
That having been said, for patients that are on chronic opioids, perhaps adding CBD as a complementary therapy can help to decrease the dose of opioids that they're taking.
For patients who haven't even been started on these medications, potentially helping them from starting on something that has a higher risk.
So if you're going to buy CBD, make sure to ask for certificates of analysis.
It should also give you a breakdown of what's in the product.
Otherwise, you might be getting sawdust.
And specifically, if there are any heavy metals, pesticides, or harmful contaminants, you wouldn't know about it.
And steer clear of big claims.
If it's telling you to cure cancer or forever cure your chronic pain, run the other way.
Don't walk, run away.

Gail, are you a dieter?
Is January like a scary time for you?
No, I have to say I am not a dieter, at least not a traditional dieter.
I find the word diet conjures up all of these expectations, all of these judgmental feelings.
It kind of sets me up, at least, in my very limited experience Kind of feeling terrible about myself.
So I always want to reset after the holidays.
I do not hold back over the holidays.
I eat, I drink, I indulge because it's the time of year and it's flowing freely.
And it's worth it?
And it's worth it.
And it is, and it's those exciting moments.
Like I love to sit around the table with my family and eat great food.
But I'm not going to make myself feel terrible about it.
January, I do want to reset.
I do want to eat more cleanly.
I want to pack in more veggies.
And just being kind of moderate.
Balance is what I go for.
And also stepping up my exercise.
You have the healthy approach.
That's what we need to do.
I try.
It's hard, as we all know.
We struggle.
Well, we've tried to make it a little easier.
Because I don't want to have a diet this year, right?
But if you want to reduce your risk of disease by up to 20% in 2020, it's a big number, 20%, and also lose 20 pounds, not by amputating a limb, but by doing the right thing for a period of time, we're going to offer you something called the System 20. There's nothing to buy.

The new rule is about intermittent fasting.
Which is something that's got a fair amount of science behind it.
I've personally been doing it for a while.
Now, I do 12 hours, but for this program, we want you to be a little longer.
From 7 p.m.
to 11 a.m., you're not going to eat food.
You're sleeping most of the time anyway.
And we've done away with breakfast, everybody.
No more breakfast, which means brunch is the new normal.
Oh, great.
So a big, grunchy lunch.
Yes.
A big, breakfasty lunch later in the day.
Just enjoy it, but don't force yourself to cram food at 6 in the morning when you're exhausted, trying to get to work, and you want to have coffee anyway.
Do you like that?
I do like that.
So the idea is you're eating between 11 a.m.
and 7 p.m., squeezing everything into those eight hours, not eating the other 16 hours of the day.
And within those eight hours, you can still kind of eat pretty much well until you're full.
You're not going to feel deprived during that time, which I think is really important.
I want you to eat well.
If you're starving yourself, it's not gonna work.
That's a diet problem.
Yes, agreed.
The reason they don't work is, who wants to be miserable their whole life?
So remind everybody, the System 20 meal, it's got a simple formula.
It's protein, plus greens, plus beans, plus flavor, which is why the dish crew is so important.
Now luckily, when we're designing the food for System 20, we got a lot of help from the Dish on House foodies, and along with their team, they designed recipes I would never have thought of, wouldn't have crossed my mind.
Like for example, you see here, a collard green, Wrapped burrito, which you're gonna wanna bring it to work and swap to your colleagues every day.
Daphne, dish the details on this.

This is the way that I love to eat, and the way that I sort of approach it is, are there little swaps I can make, like swapping out the burrito wrap for a collard green, which we're gonna do here.
Without sacrificing the experience of eating, the celebration of eating, which I think is so important when you're trying to adopt a new mindset.
I loved what you said that it's about becoming mindful again.
It's about, you know, we're carefree during the holidays.
We're having a great time.
January is about coming back into your body and checking in.
So this is gonna be a really simple, fun combo for the collard green tortilla wrap.
We're gonna use ground chicken or ground turkey, whatever you have, which we just sauteed here with some fire roasted tomatoes, a little garlic, spices of your choosing, give it a nice brown bit of flavor and bit of crunch coming together here.
Plus, canned pinto beans that I just tossed together with pico de gallo, which is just that kind of raw salsa.
You can pick it up at pretty much any grocery store or make your own, some onions and some tomatoes.
So flavor in both of the components.
We are gonna wrap those into collard greens Obviously.
I find all the greens so beautiful.
They're like prehistoric.
They are.
We can fan you guys.
We can make a flower arrangement, it's a bird, it's a plane.
But what we're actually, oh, it does generate quite a bit of fanning.
But what we did was we just blanched them and all that means is we dropped them into boiling water about a minute so they soften up and then you immediately take them out and plunge them into an That's gonna stop the cooking process, keep them really nice and tender, bright green, but make them soft and malleable enough that we can wrap them around all of our delicious fillings.
So I'm gonna take some of that turkey mixture.
And again, kind of the trick with all burrito making is not to overstuff.
I like to do some fresh herbs.
I actually don't like cilantro, but it works here.
Here's one thing I wanna show you about the way that I laid these leaves up.
I took two of them, and I laid them back to back like this.
I took the heavy stem out, I laid them back to back, so we've got one leaf, two leaf, and now I'm just gonna fold them into your kind of traditional burrito wrapper, like this.
Right, guys?
Oh my goodness.
Nice and easy.
Okay, that's what you're gonna do the night before.
Wrap it in saran wrap if you have it.
They can be so jealous at work when you go in there with that.
I think so.
That's nice.
Check that out.
And then the really nice bit is you wanna just, if you wanted to do a platter of it, if people were gonna join you to eat, a little more pico de gallo, a little Greek yogurt, a little fresh lime, juice goes a long way here.
Who wants a fresh one?
Greek yogurt, I love that idea.

This is the way to go, guys.

All right, well, I've been hearing a lot about keto.
So many of my friends are doing keto.
I'm not quite sure of all the things there are to say about it, but I do understand that you're lowering your carbohydrates, eliminating carbohydrates, and instead adding more fats, which puts your body into ketosis, helps you burn fat more efficiently, right?
So I'm gonna make one of my favorite recipes that I never even thought of as keto.
It's a classic French dish.
It's braised chicken thighs in a creamy mustard sauce with tarragon.
Super classic.
I'm channeling my inner Julia Child here.
To make a dish, you're gonna wanna make it home, and it's totally keto.
But you would never know.
I love you.
All these fatty dishes were forgotten for a generation.
Yes.
But for that to actually be good for you is amazing.
I mean, it's life-changing.
I'm gonna eat this every day now.
It's fantastic.
Bisseur, Gail.
We can all eat it, exactly.
Bisseur.
Here we go.
So I've just browned four chicken thighs in a skillet, in a hot skillet with some oil, salt and pepper, very simple.
There's nothing better than just that.
I mean, oh, it's so good.
I know, here we are, done.
Thank you.
So I have these beautiful brown seared chicken thighs.
They've gotten great color on them.
I'm gonna remove them to a plate, and then, you know, they're not fully cooked through.
I'm gonna bring them back in a minute, but I'm gonna make this beautiful braising liquid that I'm gonna braise them in.
So after you've removed them very carefully, it's very hot, be careful of the sputtering oil.
I'm gonna add to the pan some onion, thinly sliced onion, a little bit of garlic, Some thyme, and you can just pull the thyme leaves right off.
It smells good from here.
Easily.
And of course, season with a little salt.
And that salt can also help caramelize these onions, bring out all the sugar.
You want it piping hot.
Thank you.
You can pour that in.
A little apple cider.
A little white wine vinegar.
Go ahead.
Oh, white wine vinegar.
Deglaze that pan.
Gives it some tang.
Nice.
And then some spicy or grainy whole grain mustard.
And that to me is the key to really gonna start making this delicious, delicious sauce.
Can you believe this is diet food, quote unquote?
And then exactly, well first actually before you do that, I'm gonna put the chicken back into the pan.
Beautiful.
Nestle it into the onions right here.
It's the perfect opportunity just to use the word nestling.
That's right.
Get them all cozy in the pan, and then pour in some chicken stock.
Got it.
Thank you very much.
And then I'm gonna cover it, let it simmer for about 20-25 minutes until the chicken's cooked through, and you're basically done.
So juicy, too.
I mean, this keeps your bird really nice.
It does.
That's the whole point.
Look how that looks great.
And your pan sauce is completely made already.
See how that's just like simmering away?
It's thickened, all the mustard and the onions, the flavors come together, and you're ready to eat.
So the last little trick is to put your chicken.
I'm serving it with some garlicky, lemony spinach.
Super healthy again.
We've got the greens and the protein.
And then the last finishing of this sauce Is just to take a little bit of cream because you're allowed on the keto diet.
Because you're allowed.
Because you can.
Because you can.
So why are we not just pouring the whole thing in then?
I mean, we can.
Come on.
I'm trying to be graceful.
Please, Daffy, don't be a bad influence.
Stir it in and that just gives it that creamy, velvety-ness.
And then you just want to spoon that sauce, thank you, right on top.
Get all those juices together.
And those onions have melted down, giving you that sweet, beautiful flavor.
To think this is part of System 20, imagine this.
This could actually be unbelievable.
Wow.
You could do this every day for the rest of your life.
Yeah, I'm happy to.

This is gorgeous.
And then I'm gonna finish it with just a little bit of tarragon, because tarragon's one of my favorite herbs, and I think it just never gets used enough.
It has a slightly licorice flavor, but it goes so well with the mustard.
It's just classic French bistro right there.
And now she's ready.
Have a taste.
Now she's good.
Oh, my goodness.
This is just like a perfect, complete weekday meal, half an hour, super healthy, and, you know, System 20 friendly.
Mm.
Mm.
It melts in your mouth.
Mm.
Do you know what's crazy?
The addition of that lemon zest and the tarragon keep it very bright and fresh, but it almost tastes like smothered chicken and dumplings.
Like we are getting very close to the line of just, it feels breaded.
It feels like that rich and sort of, you know, not necessarily healthy way to eat that many of us still enjoy.
You know, this is reminding me though, for me for January, and really whenever I'm looking to kick up my health game a little bit after having babies, I really don't make a big stink about it.
I'm still breastfeeding, so I'm not making a dramatic change the way that I eat now in January.
But rather than going crazy on the eating front, I do try to commit to my body on the workout side.
And for me, it's really about a daily sweat.
And I don't care what that means.
It's like, people who follow me on Instagram, I do document for them of like, Today I'm trying this, you know, Instagram workout or I'm trying, I'm following someone, I'm trying the workout they did on some website.
I'm sweating, I'm doing like a yoga class or something.
I really, as you can tell, like barely leave my home to do it.
And I think that's part of it.
I don't make the hurdle super high.
I don't commit to an hour of working out every day.
I do what I can.
I find that for myself, consistency is key.
And it's about realizing that everybody starts somewhere.
I think that that is the real motto for myself for this January and for 2020, wanting to You know, get my strength back, feel strong in my skin again after my fourth baby.
It really is about remembering that everybody starts somewhere, and committing to that consistency, and committing to caring for myself, and that self-care that is not selfish, you guys.
That self-care is not selfish, and you are all worth it, you deserve it.
And if you aren't, Feeling great and feeling healthy, you're no good to all your kids.
You need to be there.
You need to be healthy and strong for all the people.
We don't want any shells.
You have to take care of every day.

Well, Daphne has another low-carb keto recipe trick that you're gonna love.

Yes, and key word, delicious, actually.
This is keto, but it's also delicious.
We have here these beautiful coconut milk chocolate mousse.
They made them in an espresso cup here for portion control.
I'm gonna show you how you make it.
So it's really simple.
All we did was take equal parts, bittersweet chocolate and unsweetened chocolate that we melted.
And once they're melted and combined together, we added them to some full fat coconut milk.
Let that mixture combine, which is what we have here, and cool.
And once it's blended together, we're gonna stick it over an ice bath, nestle it right Nestle it right there into your ice bath.
Word of the day, nestle.
Lovely, cozy word.
And get your arm workout in like this.
This is literally gonna take five minutes.
But what you'll see is that the fat of the coconut milk incorporates the cold temperature and starts to lift up and creates these beautiful mousse cups, which is incredible because you don't need to include any of the sort of more traditional recipes that would include eggs and other things.
Something so simple like this brings it together and gives you that same mouthfeel and texture.
Here's one thing to keep in mind.
An ounce of 70% dark chocolate has only 10 net carbs, and we mixed in some of that unsweetened chocolate as well to reduce the carbs even further from there.
So if you're cutting out sugar entirely, you can try using unsweetened chocolate and adding just some monk fruit, something that won't elevate your blood sugar.
You know, without the crazy amount of...
You keep working there.
You actually burn more calories making it than eating it.
Ten minutes, guys.
That's all it takes.
Remember, you're sneaking in your workouts.
When it's not stupid sweet, you actually don't want too much.
This is about...
It's like espresso, right?
You wouldn't have 12 cups.
It's really rich, so it's super satisfying.
It's a palate cleanser.
