Scammers have been using her image, as they have my own, to sell health and beauty products without our permission.
Now she's working with the FBI to protect you from getting duped.
Our boots on the ground sources say con artists using celebrity names and images are feeling the heat as some of Hollywood's biggest stars fight back.
New developments in our ongoing war against fake ads.
Sandra Bullock and Ellen DeGeneres just filed a lawsuit to expose the celebrity endorsement theft industry.
It's a battle we've been fighting for years.

First, I went after Tar Inc.
They were illegally using my name to sell a bogus weight loss supplement.
Have you ever put my picture on your website, any website that you're involved with?
At one point, I believed that the client might have been using the video, but that's no longer the case.
How would you feel if I took your picture and put it on a website and said you endorse something?
I've never used your picture.
You just said you did.
Next, we sent Barbara Corcoran to confront this man, who was fraudulently using her image to sell a face cream.
Great.
You're the president of this company, the CEO. I'm Barbara Corcoran, and you've been using my name and my face to market the crap out of your face cream.
Do you have my permission?
No, I don't.
Why would you do that?
We also work with Christy Brinkley and a private investigator to find this woman in L.A. who was selling face cream using Christy's name.
Christy Brinkley.
And this is your product right here.
This is her applying it to Dr. I. How do you explain that?
I can't, but let me look into this.
And now, the latest celebrity being ambushed, Shark Tank's Lori Grenier.
Recently, she made a plea on social media.
It hurts my heart for all these people that are getting scammed out of their money with these fake ads using my image.
Please help me to stop these scammers.
In fact, Lori just teamed up with the FBI, and today we're showing you how to fight back.
Lord, thanks for being brave enough to come on the stage today.
This is an issue that so many are suffering from.
You're putting yourself out there.
God bless you.
When did you first realize your face, your image, your reputation was being used to sell products?
Well, people started asking me, calling me, texting me, writing me on my social media platforms, and they said, does that keto pill work?
Does that diet aid work?
And I'd say, what diet aid?
And they'd say, well, there's ads of you all over the internet showing you selling a keto product.
And I had no idea.
So it was extremely upsetting, obviously, right?
Because I've spent a lifetime making products That are just household products, organizers, things that make your life easier or better.
But I stayed away strictly.
I never do diet aids.
I never do keto pills.
I never do anti-aging creams.
Nothing like that.
So you never held that bottle in your hand?
Never.
You never sold a weight loss pill, as you said.
Never.
Never in my life.
Keto pills, no affiliation with that company.
No, no affiliation whatsoever.
And I strictly stay away from products like that because I don't like products that give false claims.
So, let me say this.
I also never sold a diet pill, a keto pill of my own.
I've never sold skin creams with Ellen, even though you see videos of us seemingly doing it together.
The ads that you see on the side of your computer screen are blatant lies.
There is no other word for them.
But, unfortunately, they get away with it because they've skirted the law.
How angry does it make you that companies use your name and likeness?
They trick innocent people into forfeiting money to buy stuff that's probably not good for them.
At best, it's worth the stuff.
And then they get away with it.
Yes.
I mean, it's so upsetting because I spent my career helping others, doing good, giving back, and purposely making just products that make people's lives easier, better, and staying away.
I've been very careful not to do products that support things that could be false claims, like a diet aid, like an anti-aging cream.
I literally steer clear of anything like that.
And this isn't just about people using our names and faces.
If that was the only reason we're doing this, I think folks would hear it and move on.
This is about you guys.
It's angry because these con artists are taking your hard-earned money out of your pocket.
And here's the thing, if they'll steal our names and likenesses, if they'll steal your money, guess what else they'll take?
Your health.
They'll put junk dangerous stuff in these products.
And people who are buying these things are smart people.
I've got friends, as you have, who bought this stuff, and they think it's fantastic.
It doesn't work.
They get disappointed in me.
And I've got to clean up my own mess in my own neighborhood.
Imagine what's happening around the world.
I know you're going through this.
So let's explain to everybody exactly how this happens, how these scoundrels are getting away with this.
Come on up here.
So it all starts with a boss, right?
Someone who wants to make money.
So here she thinks to themselves, what is it out there that people would pay for that I could sell?
Creams, pills, whatever.
And they're gonna pick something and make an outrageous claim because nobody else will use that claim because it's not right.
But because they're lying anyway, you might as well lie big.
So they'll take Lori's name or my name, right?
So this person, this boss, hires a fulfillment center, right?
Basically a big box place that is a place so you can make the stuff, slap a label on it, and ship the supplements.
But here's what's missing.
He needs someone to sell it.
Who's gonna sell the stuff that you're gonna ship?
Well, these are called affiliate networks.
This is not hard to understand.
Boss gets someone to ship products, but they got someone who's got to do sales for them.
The affiliate network gets paid by the boss to find and hire clickbaiters.
Now, you know who these people are, right?
They create snazzy, eye-catching ads.
These guys get paid on commission.
And I'm talking about cash.
A lot of it.
And they will do anything to get you to buy whatever they're hocking.
They'll steal a picture of Lori and me.
Here's an example, right?

Completely made up.
We were never in that picture together.
That bottle's never between us.
And they're gonna use that ad just to get a click, right?
They're gonna put it inside one of their ads.
There it is.
And you say, geez, I trust Lori.
And Dr. Ross says it's pretty good.
I'm gonna try this thing out, right?
And for 10 years, I've been trying to stop this down.
And I'm pretty good at what I try to do.
The reason I can't stop it is these folks are really good at it, and they've got to support some of the biggest companies in this country.
These ads are fake, they are dangerous, and their sole purpose is to trick innocent people into opening up their wallets.
So how easy is it for a clickbaiter to doctor up an image of a celebrity and use it to trick you?
We sent Lori to see firsthand how her image is being manipulated.
Shark Lori Grenier has a problem.
Online scammers are using and abusing her image to fraudulently sell keto pills.

Hi Lori, nice to meet you.
Nice to meet you.
Come in, have a seat.
Art director Phil Cohen at Pennsylvania design firm Gecko Group showed Lori just how easy it is to steal her image and use it illegally.
So if I was a scammer and let's say that I wanted to sell some sort of drug pill, I need someone to endorse this for me.
So what I would do is to blog on to your Twitter account and Google and I pulled down some images.
of you in poses with your hands that just look like they're asking to be holding my product.
We use Adobe Photoshop, which is a software program that's available to everyone.
So we have this bottle here.
Looks just like the one I have.
Right.
Now it's as simple as this.
So I'm just going to drag it over and put it in your hand.
Now, there you are.
Now you're endorsing my product.
Before and after.
Never hold my hands like this again, ever.
It's really incredibly awful.
Now, say that I want not just you, but I also want Dr. Oz to endorse this product.
Oz on set with Santa Claus, right?
I'm going to use this same photo of you.
Photoshop out Santa Claus.
Oh my gosh.
So horrible.
Realistic enough that you can buy it.
They just snuggled me right into his armpit.
Add some shadow in there.
Buddies out there.
Best friends selling my product.
There's also been some stuff going around about anti-aging creams and some other stuff.
So here we have a Dr. Oz headshot.
So if I were to age him a little bit, here I aged him in Photoshop.
All the websites have before and afters on them, and they've just done the exact same thing that I've done.
So here we could be selling anti-aging cream.
Look, this is what Dr. Oz looks like before they use the cream.
A couple applications of the cream, and there you go.
It's unbelievably infuriating, isn't it?
Well, it's just so disturbing.
Like, you know, I don't know.
If you want to do ads, you shouldn't do that, you know?
Like, you just...
I'm speechless.
I really am.
It's so incredibly disturbing.
Are all of you mad?
I'm just curious.
Does it bother you?
Doesn't it bother you?
Everyone's angry when they hear it.
It's time for us to all rise up and start taking back our honesty, our integrity, the virtues that we control as a country.
Yeah.
So I asked web investigator Christine Durst to do some digging into these keto boost pills for us, see what's going on, what's really happening out there.
First, what kind of scams are they actually running, and how do they get people's money?
Well, generally these are subscription scams, Dr. Oz, and that means that they're baiting people in with free trial offers.
You're also having them sign you up for a subscription plan.
So every month, your card is going to be billed for somewhere between $50 and $100 for a product that you thought you were just getting a free trial of.
And they'll do that until you cancel.
But of course, scammers being scammers, canceling is not easy.
So do you know who's behind these fake keto ads?
Who's the boss?
Or the affiliate network, even?
I was able to track this particular product to a couple of different affiliate networks.
So far, I haven't been able to get them to crack open and tell me who the owner of that account is.
Don't give up hope yet.
I haven't.
Now, I'm going to break a little bad news to Lori through you.
I understand you uncovered through your investigation another fake product.
Someone's coming down the pike that involves Lori.
I did, Laurie.
Sorry to break it to you.
So apparently you're the money behind enhancing men's sex drive now.
Everybody's got to know that that is not true.
It's like really getting crazy.
I think you'll have an image coming up where you can see that what the scammer did was they took a picture of you standing between two business owners who are wearing shirts with their company logo.
And they photoshopped out that logo and they put in this Max Libido logo instead.

This is the actual ad.
I'm going to show it to you.
Now, these are legitimate business owners that I understand you did sponsor.
They're my drop stop guys.
I did a deal with them on Shark Tank.
You know what that says to the world, Dr. Oz?
That they shouldn't trust any product that is any type of pill or cream with my face on it.
Never.
I'm never going to do one.
Never trust it.
That's horrible.
Shark Tank, ABC, and those poor guys who are hardworking entrepreneurs and the loveliest people.
They're all going to be really upset.
Well, since I've done a lot of homework on this, I've got some tips that will help people decide what is legit.
So when we come back, we have joined forces with the FBI, folks.
The FBI. They're here to arm you with what you need to know to protect yourself against fake ads.
You will not want to miss this.
I'm back with inventor, entrepreneur, "Shark Tank" star Laurie Grenier, who's being brave today about a problem that's affecting a lot of folks.
Online scammers are using her face and name to sell products she has nothing to do with, including weight loss supplements like these.
Now Special Agent Bob Cameron from the FBI's Cyber Squad is here to give us his inside tips on how to avoid getting duped by these scammers.
The first thing to look for is a busy site is a bad site.
And I should say this, I love that the FBI is engaged, and I treasure the fact that you took time to come here on the stage.
That's how big a problem this is, everybody.
Let's protect the folks watching, because it's not about me and Lori, it's about all you and your health.
Let's do it.
The busy site, what's wrong with it?
Busy site, you see a lot of pop-ups.
Pop-ups come up, you see...
A constant scroll of who recently purchased the product.
What do you got, Alexandria in Philadelphia just purchased seven bottles?
I don't think so.
Exactly.
You have a timer at the bottom.
You got this big thing here, and a timer.
Right, that big thing is a pop-up.
You click the pop-up to shut it down, it will pop right back up in about 20 seconds.
This is what you call a tell.
This is a clear indicator that this site is fraudulent.
Okay, next up.
Real marketers don't use nonsensical domain names like that.
This is critical, yes.
You can tell right away.
This site is called the landing page.
It's the first hop after you hit the ad to buy the keto product.
It's pretending to be a Fox News site.
It is obviously not a Fox News site.
And how you know that is you look at the domain right here.
It's a series of random numbers followed by the.VIP designation.
You believe Fox News, but this has nothing to do with Fox News.
They're as angry as we are.
Next up, never trust a graphic.
This one really threw me off.
When I see a site and I have all these wonderful, you know, it's a secure site, Verisign trusted, accredited business, you know, Google says it's a trusted store.
It's got to be legit, right?
Right.
It's important to know that these badges can easily be faked.
One way you can test those is to hover over, in this instance, the Better Business Bureau, and you'll see it redirects you right back to the fraudulent keto site.
Falling for a scam like this is really the great equalizer, because people from all walks of life, income brackets, age brackets, everyone's vulnerable.
Special Agent Bob Cameron came on the show because you care about this.
This is why I'm here.
It's important that we need to speak to the people.
We need the people to come to us at IC3.gov.
It's our Internet Crime Complaint Center.
And tell us their story about their victimization.
Provide the details.
Give us the information we can do to address the threat, address the scam.
And folks should not be ashamed.
Laurie, I don't know about you, but I hear this from a lot of folks who watch this show.
I've been kind.
We've all been kind.
It's okay.
Move past that and realize that your shame can be converted into bravery.
If you alert the FBI, and we go out and take some of these folks out so they don't take care of other people just like you.
And I want to hear your stories firsthand, because celebrity endorsement theft is not a crime against celebrities.
It's a crime against you.
It is reckless and is dangerous to your health.
I wrote about this actually in a peer-reviewed paper.
It's a doctor's article, doctor's journal, the first of its kind, with colleagues of mine, doctors from the Mayo Clinic.
Anyone can read it for free.

It's a problem because doctors are having patients come in there and say, Laurie Grenier said it was okay, and the doctor doesn't know what to say.
We're all getting conned at every level.
Now, you and I made a digital video.
We're going to post online.
Folks can take it and use it with their colleagues and their friends to highlight some of the ways we can avoid getting conned.
But I want to ask you a very personal question.
I've talked to a lot of celebrities.
And most are unwilling to make a big deal about this because they don't want to look bad by going after scammers and getting caught in the muck, the swamp that this represents.
But why did you decide to step forward, put your hand up, risk getting shot, and go out there?
Well, listen, I'm a product person.
And I've spent my entire career making products for people.
I went on Shark Tank because I care about helping my entrepreneurs.
So I've spent a lifetime helping other people.
And so to have my face be used on products that dupe people, cheat them out of their money, or as you said, potentially could harm them, that's not okay.
And I want people to know that if you see this face, Selling diet aids, anti-aging creams, anything that you put into your body that's supposed to make you lose weight or some transformation, it isn't me.
It's not me, and so I'm trying to protect others.
That's why I'm here.
Let's all help each other, and we can with awareness.

You're a poster worker.
I get it.
So you're out and about.
You see lots of things.
How did you get involved with the search for the first child that you found?
The first child I found, she was an autistic student.
And I used to work with kids with disabilities, not only just autistic kids.
And I knew that I had a heart to want to help find a young girl.
That's what made me want to be a part of this search team that was going on at the time.
I understand that you actually didn't have the actual paper there.
I took a picture of it.
You just kept it on your mind.
You kept looking until you finally found her.
That's remarkable.
Right.
When there were search teams going around, they ran out of flyers.
So I asked them, hey, can I please take a picture of it?
I would like to send it to my coworkers and just have it with me because you ran out.
They said, sure.
Not thinking that I will find her.
You know, it's really rare that you find missing kids.
You won't always see them in a newspaper.
I see them every day because I'm a postal worker.
So I see them every day.
So to actually find one, oh my goodness, I was so excited to reunite this young girl with her family.
Now, only a few weeks later...
Yeah, please applause.
Unbelievable.
A few weeks later, you had the opportunity to help another child in need.
What happened this time?
Two weeks later, I found another missing child.
She was five years old.
Can hardly speak any, you know, anything at that time.
And as soon as she saw me, she ran up to me, holding me and squeezing me because she knew that I was so unsafe and that I would get her home safe.
That must have felt good when you got the mom and the baby back together again.
Right, it did.
It did.
It felt so good.
So I love hearing stories where people are showing the power, one.
The power each of us has to make a difference.
How have your actions impacted your own life?
It impacted on my own life by wanting to go back to school and make this as a career.
I enjoy working with children and children with disabilities.
Like I said, I used to work with them before, but now this really, really made me really want to go back to school.
I actually would like to be a special ed teacher.
That's fantastic.
And Cheyenne, I want to re-ask one question, just to give you the same answer, because I couldn't get it because the camera was being juggled.
So walk me through exactly what happened with the second child.
How did you find the child, how old were they, and how did you reunite them with the mom?
The second child?
Yeah.
I reunite this second child.
She was five years old.
I stayed with her, asked her a couple of questions to make her feel a little bit comfortable with being with me.
The mother came and said, thank you so much.
Thank you, thank you, thank you.
She couldn't believe it.
You know, she couldn't believe that I was there helping her own very child.
You know, she could have wandered off in the wrong hands.
Good thing I was there.
It is a good thing you were there.
I'm very proud of you.

So for the 82-year-old grandmother, who also happens to be a bodybuilder, she sent a home invader who broke into her house at night to the hospital.
I think it's pretty cool, actually.
Then there's a 13-year-old So almost nabbed on her way home from school.
But she managed to fight the man off.
He was arrested soon after.
So she saved herself and probably some other people.
And we just heard from Cheyenne, a postal worker, who made headlines after she helped find not just one person, but two missing kids in two weeks.
Now personal security expert and former NYPD officer Bill Stanton is here to give us a plan of action in case we need to be better prepared for our next undercover Crimestopper role.
So we just heard from that postal worker Cheyenne.
What are some lessons that we can learn from her ability to demonstrate the power of one, the power of each of us that have a changing ability in the world?
We all can be self-empowered.
And what distinguished Ms. Thomas from everyone else in that scenario were two mitigating factors, in my opinion.
One was her familiarity with special needs children, in one case.
And in both cases, she had situational awareness, being aware of her surroundings.
And that's what made her, in my opinion, the hero in that situation.
Let's go through this awareness issue that you think has changed.
In our everyday lives, we have to have a different level of insight into what's going on around us.
Well, in today's culture, and I'm guilty of it sometimes myself, we live in an ever-decreasing bubble, as we cocoon ourselves with our earbuds, and I'll call it our not-so-smartphones.
I mean, you go out in everyday life, and that's all you see.
And people are spending far too much time in the cyber world, not enough in the real one.
So, no one wants to be in danger.
I don't want to put you guys in danger, in harm's way.
Don't make a bad situation even worse by throwing yourself into the middle of it without being trained.
But there are times we may have to act.
We may be face to face with a criminal.
What do we do?
Well, it's called, in my business, we already went over the situational awareness.
It's critical thinking and strategic planning.
So what's that?
You see something going down, something that doesn't seem right in your opinion.
So you switch to strategic thinking and you make an action plan.
And that action plan, to be able to save someone, maybe it's a family member or a stranger, could be as little as calling 911, rallying a bunch of people to help pick up a car or something like that, Or, if all else fails and there's no other choice, taking physical action yourself.
Give me one little prompt before we go.
I'll stand up here.
Let's say that we're in a situation like that, and it's just me against you, and let's say you're not as big as me.
Okay.
So I'm coming at you.
Alright, so your specialty is thoracic surgery, correct?
Yes, it is.
Alright, today we're all going to be ear, nose and throat specialists.
Okay.
Ears, nose, throat, and we'll throw the clavicle in, and then run, get that person, get out of dodge.
So you smack the ears, smash the nose, hit the throat, and then hit the clavicle.
A couple of pounds will break that, grab that person that you're trying to save, get out of dodge.
That's run away.
That's the key.
Don't run away.
Don't stay, see what you're doing.
Just get to business and go.

We have a make-ahead apple cider vinegar pork roast that's gonna wow your guests.

So delicious and an easy one too.
A low calorie holiday dessert that bakes itself.

And we are starting with your new favorite holiday appetizer, a low carb roasted shrimp cocktail.
It's gorgeous.
So Gail, dish us the details on this beautiful shrimp dish.
Absolutely.
Well, this is great because it's classic shrimp cocktail reinvented to make your life easier.
So everyone knows when you make a shrimp cocktail, you have to poach the shrimp and all the herbs and the spices.
You have to bring up a quart bouillon, this fancy broth to a boil.
We're not going to do any of that.
We're just going to roast it so it's literally one stop.
Can I tell you something that's maybe controversial?
Yes.
Shrimp cocktail is only delicious because of the cocktail sauce.
They don't actually taste like anything.
That is true.
So these shrimp are going to taste like anything.
We're going to add flavor and great sauces.
Good.
So I have my shrimp, raw shrimp, in a bowl, and to it I'm just going to add A little olive oil, obviously.
You need something to coat them for baking.
A little bit of salt.
Whole garlic and a bay leaf.
Everything's just going right in the sheet pan.
Right, this is your ingredient.
Some paprika, a little flavor.
And then, I'm not even squeezing these lemons.
I'm tossing them right in.
I'll show you why later.
Toss it all up.
Get that flavor going.
I'm literally going to dump it out on a sheet pan.
Beautiful.
I'm gonna roast it at 450 for about, I don't know, 10 minutes.
Okay.
You're gonna get all of the lemons in there, the garlic, all that flavor.
Love a roasted lemon.
Why didn't you squeeze the lemon juice in there?
It's not gonna get spread just by cooking.
No, it's not.
And I'm gonna show you when I'm done.
I'm gonna take this to the oven.
There's a lot of shrimp in here.
Okay.
Shall I run that over?
Yeah, please.
Yeah, you got it.
Put that in the oven.
Okay, let's do this.
And then when it comes out, all of these lemons have been beautifully charred.
You see how they're just like roasted and charred?
And that's not just to make them look pretty, that also helps to get all the juices out, right?
That brings all the essential oils out, and now they're super easy to juice, really soft.
And now you can squeeze them all over and serve them just like that.
This is also just a fun kind of more casual look to the holiday table, which I think is nice.
And now they have tons of flavor.

And I think, you know, like you said, obviously it's, I think what's nice here is it's nice and flavorful on their own, but you can't, you cannot go wrong with some nice sauces.

So first up is a classic cocktail sauce.
It's so simple to make.
Basically a Bloody Mary in a cocktail sauce.
It's a little bit of ketchup, some preserved horseradish.
I like to add some fresh horseradish in there too if you have that.
A little lemon juice, Tabasco sauce, some Worcestershire if you have it.
But then I added this beautiful sort of green goddess style, a creamy herb dressing.
And I think these are great as toppings if you're taking it to work for the next day or something.
Leftovers.
All right, so Dad, today's show is of course about Oz approved recipes, holiday recipes.
I understand you actually have an app for that.
Oh, I see what you're doing there.
I got this.
The appetizer that is perfect for the crowd.
This is what you're gonna love.
I worked hard at this.
It's all about my new nut replacement, chickpeas.
All right, so you take the chickpeas, you dry them off with a little towel.
So they look like this.
Chickpeas all over the world, popular.
And then, this is important, Add a little olive oil, a little rosemary.
You can throw the whole thing in there.
I like to pull a couple free.
Whoa, whoa, whoa, chef in the house.
I was going to say, your dad's doing a lot of cooking right now.
My goodness, this is out of control.
Your mother taught me.
Now, this pan, be careful, preheated, super hot for a reason, so you can sort of Sizzle it.
Sizzle them a little bit, that's the word, not char.
But when you get them going like that, even though it's a little hot, you start the process.
And this will actually crisp on the outside, which I like, because I like that nut mouth feel that you get.
Then, if you need a little more salt, you can add it there.
And then off you go to the oven.
And the beautiful thing is, after 20 minutes, these are baked, and they are done.
And there are a lot of, go to the bottom one.

I have to say, in general, I think that chickpeas are, like, canned chickpeas are the single most underrated thing in your pantry.
In general.
I'll toast you to that.
There's so much to do with them.
They're so good for you.
Protein.
Protein.
They're great in salads.
They're great in roasting.
They're great to make purees.
Like, such a versatile ingredient.
But the best part is it stores.
Because you can put this in a little container with a little paper towel or parchment paper there.
It'll soak up any extra moisture.
They keep crisp.
Just like that, you can pull them out.
Easy to use.
Oh, you just pop them in.
That's delicious.
Show off to your friends.
They'll be so impressed.

- Bye, goodbye. - We are back with make ahead Oz approved holiday recipes for a crowd.
Actually, additional details on the holiday roast, the biggest part of the meal.
Mm-hmm, okay, so we're gonna make a delicious pork loin.
This is something that we're gonna make and marinate for the day ahead, because again, the whole idea is to set yourself up for success during the holidays.
By preparing as much ahead of time as you possibly can, we're gonna make an apple cider vinegar plus apple cider glaze, which I think you're all gonna love.
So the first thing first is, what are we gonna do the day before?
We're gonna grab our meat, which we've just trussed with a little bit of twine just to hold it all intact.
And everything's gonna go right into this plastic bag where it's gonna sit overnight.
So first up is some apple cider.
Get into that fall and winter spirit.
Really nice and tender.
Well, it makes it tender, and I'm actually adding a bit of apple cider vinegar as well to help with that tenderizing process.
And it adds a little bit of sweetness to the sauce too, because you'll see everything gets made in one pan.
Minimal cleanup.
A whole head of garlic.
I mean, we're talking about 10 cloves of garlic here.
Not squished or anything, just whole heads because you're going to want it to infuse the flavor.
Some Dijon mustard, or you could, if your family likes it spicy, try a little spicy Chinese mustard.
That goes a long way.
One chopped red onion.
And then two bay leaves and a bunch of herbs.
I'm going to use rosemary and I'm going to use some fresh sage too because I think that goes so nicely with poultry and with white meat like pork.
Just seal that up.
And I'm doing it, you can see, and I'm going to store it in my casserole dish so that in case it leaks or the bag pops or anything, you're not making a mess on your countertop that you need to worry about.
And there you have it.
Everything is making this gorgeous sauce right here in the bag, making sure those herbs are incorporated, that beautiful garlic, that red onion.
A little bit of salt.
Now, this is not a brine.
This is not gonna flavor your meat with anything other than the beautiful essences here.
We're actually gonna season the pork the next day.
So this is what you did overnight, the marinade overnight.
Then we're gonna bring the roast up to room temperature, take it out of the fridge 20 to 30 minutes before you're ready to cook it, to make it happen that way.
And then I literally dumped the entire contents of this bag into my roasting dish.
A little bit of olive oil right on top just to help with that golden brown glistening process.
And then of course a little bit of salt.
I'm also gonna add some chicken stock right here into the base with all those other flavors.
And like I said, this is gonna make a beautiful pan sauce right on the bottom as this pork hits to the oven.
It's gonna cook.
Now here's the tricky part for the cooking process.
You want to start it at a super high heat.
You're gonna crank it all the way up to 450. For the first 15 minutes, that'll make sure that you get this gorgeous, crisp outer skin.
Then we drop the heat and the final 25 minutes are about 350 degrees so that you get that juicy, flavorful meat all the way through.
It's heavy.
I'm not gonna lift it.
You guys know what it is.
It goes to the oven.
It comes out and you rest it for 15 minutes and it looks like that.
Oh my goodness.
Oh, nice.
That is our gorgeous girl.
So again, we made it ahead.
As much of the process as possible, we did the day ahead and then we bring it out and make it look so gorgeous like this right when our guests come over.
Now here's the thing, I cut off the twine that we had over there, but you can see it actually provides a really nice mark of where you wanna kinda cut these medallions up.
And look at that meat.
That is some beautiful 10-inch meat.
So Daphne, you make it look easy, and I see it's the perfect pink, but Gail, what is the chef's secret to making sure you don't undercook or overcook the dish, which completely destroys the entire meal?
It does, and people get really worried about doneness of cooking, especially like pork, because they're worried about getting sick.
Use a thermometer.
Use a meat thermometer.
This is a very cheap and really smart tool to keep in your kitchen and it doesn't have to be complicated to read.
For something like pork, you want to take it out of the oven at about 140 and not too much higher.
Take it out.
Let it sit on the cutting board covered like we had it in the foil.
For 10 minutes, and it will usually rise to about 145, maybe 150, and that's where you want it.
I mean, it's obviously personal preference.
You want it to still have a little bit of juice and pink.
As long as the juices are clear, right, then you're fine.
But you want it to have that pink rosiness.
We're not going to get trigonosis from our poor McDonald's.
Well, the other thing is, if you overcook your meat, you have to put stuff on it to make it gain taste again, and those things you put on it are not good for you.
No, that's right.
The meat itself should taste good enough that you don't have to add anything to it.
You made that excellent point.
This meat is going to taste good on its own, and there's the visual cue that I like, because the thermometer's the most important and the most accurate, but the visual cue that the juices are running clear, then you know it's cooked to perfection.
Great.
Okay, I'm gonna lay it over this beautiful puree of white beans that, again, we can make the day before.
And I'm a fan of kind of laying these out.
Not too pristine.
I want it to look lived in a little bit like this.
I'm gonna add in a few of these nice roast vegetables that happened in the bottom of the pan as well.
They look great.
Caramelized onions, you guys.
These things are gold.
And actually, we have a beautiful couple cloves of garlic here to add on top.

It's a layered meringue that has all the goodness of this hot chocolate we're drinking, but it's light enough to enjoy it even if you're stuffed from the big dinner.

So here's how easy it is.

All right, so the deal here is you're just gonna make a really simple chocolate meringue.
So we made it with egg whites, cocoa powder, sugar, and some melted dark chocolate.
All right, so here's why it's a great make-ahead option, though.
We actually baked this meringue cloud in the oven, then turned the oven off, cracked the door, and let it sit in there overnight.
And it's gonna help it dry out and prevent it from cracking, which is the The big sin when it comes to meringue.
Then day of, all you have to do is assemble.
So this is a gorgeous, you know, nice and dry, and cooled, but what's nice is the tender center is still gonna mean, ah!
The chewiness, hey!
They are not done yet.
Excuse me!
I thought I was topping a zit.
Yeah, just everyone pull it apart.
So now here's how you top it.
You top it with some nice homemade whipped cream here.
And then that's gonna give it that cloud consistency.
And just give it a little zhuzh here.
Press it out to the edges.
That is a cloudy, gorgeous cake.
But that's not all.

Okay, now I'm gonna drizzle it with just a little bit of melted bittersweet chocolate or semi-sweet chocolate.
Just like that.
I mean, and then just a little bit of chocolate shavings on top.
Beautiful.

You can eat it like a pizza if you want it.
Yes, it's like a chocolate meringue pizza.
Oh my goodness.
It's chewy.
I love the chew of meringue.
It's underrated.
But the chew melts pretty quickly in your mouth.
