Actually, there's a lot missing because I drank a lot of them.

I like to open it up and put fruit at the bottom.
I probably have like nine or ten seltzers a day.
I have a confession to make.
I hide seltzer in my bathroom in the medicine cabinet.
I just need you to see what I keep in my trunk.
You never know when you may need a little sip of seltzer, right?
So I love seltzer.

Food scientist Taylor Wallace is here along with nutritionist J.J. Smith.
J.J., we have been drinking and talking about seltzer on this show forever.
What is going on with this big seltzer boom right now?
Oh, my goodness.
I call it the bubbly water.
I mean, it's carbonated water, but really no matter what diet or weight loss plan, whether it's the keto craze or paleo, the green smoothie cleanse, it literally fits into every single diet or weight loss plan.
It's a drink you can have that will be totally guilt-free.
All right, Taylor, you've tracked the sparkling water trends, you looked at them all, the popularity has taken off.
What are the latest ones we need to know about?
Absolutely.
So, we've got steltzer waters with natural flavors, we've got ones with fruit juices, and the fastest growing on the market, ones that contain alcohol.
Alcohol.
I like genius going.
Let's dance our way over.
Let's start our investigation with the classic seltzer.
So, the classic seltzer is what we all started off with.
You know, our parents, you know, they used to drink this stuff and it sort of went away for a while.
Now it's big.
What's in the classic seltzer, Taylor?
So, it's very simple.
It's water and carbon dioxide.
And that's what makes it fizz.
What are your thoughts around that, JJ? Well, as a nutritionist, I love it because it's zero calories.
That's the most important thing.
So if you're still trying to get your body right, this is a great drink for health.
So it checks all the boxes.
Okay, next is seltzers with natural flavoring.
That's what they call it, natural flavoring.
Give us some examples, JJ. Okay, so these ones I get real excited about because they have everything from passion fruit to black cherry to lemon lime.
There's all these great flavors.
So they kind of have the essence of fruit, but guess what?
They're still zero calories.
This one tastes like lime, for example, but there's no lime in there.
So how do they actually make these different flavors?
Right.
Well, what food scientists do, it's very similar to alcohol production, where you distill it.
So you cook it, the flavors evaporate, then you cool it down, and they condense.
You can add it right in there.
Okay, and who do you think a social option is best for?
Well, this is for people who still need the zero calorie drink, they're still concerned about their weight, staying on their diet, but they really need a lot more flavor.
This is what I usually drink.
Ah, I like it.
Same here.
All right, so next up in the investigation, we looked at the new wave of sultures that are out there.
These are sultures with real fruit juice, not the natural flavors, Taylor's speaking, but real fruit juice.
So how do these compare with what we just spoke about?
Right, so it's basically the same process as producing the regular steltzer waters, except instead of the natural flavors, you're going to add either sugar or you're going to add something like fruit juice or fruit juice puree.
Now keep in mind, puree means a lot of added sugar, so you have to be savvy when it comes to these types of products.
Walk us through the nutrition on that, JJ. Yeah, see these are a little tricky, Dr. Oz, because these generally will have a lot more sugar, anywhere from four to 45 calories, so you have to be careful with these.
I still am in favor of what I used to drink.
Okay, for the buzziest seltzer of them all, are you ready for this?

Food seltzer sales are up 200%, basically doubled.
It's not the summer anymore, but they're still fairly high.
What makes them work?
It's become a trend.
It's like rosé.
It started really local in the summer.
People were drinking it.
It was no big deal.
It's like a billion dollar business.
This is on its way.
It is so huge.
Everybody's talking about it.
It's selling out.
When things sell out, that's when you know it's like a trend to stay for a while.
So I trust you on taste issues and trade issues, but I'm going to go with Taylor here for a fact check on the big food issue here.

What makes sense?
What's in here?
How do you put alcohol with seltzer and make it work?
Okay, so these products are not regulated as a food, they're regulated actually as beer.
Beer?
Yes, so they are not regulated by the Food and Drug Administration, they're regulated by the Alcohol, Tobacco, Tax and Trade Bureau, which means they don't have to label calories.
So, these things have about 90 to 100 calories in there, so it really, you're not gonna blow your diet by going to happy hour.
Walk me through his persitters.
This part I get.
You get the regular part of the seltzer with some flavor.
Right.
So, again, same process.
And you can add either fruit juice or fruit puree to really flavor it up.
Again, you gotta watch the added sugars when it comes to the puree.
But then, You add alcohol, which can be either from regular sugar, like corn sugar or beet sugar, or if you want to call it a malt beverage, you can ferment the alcohol from malt.
Okay.
That's a lot.
There's a lot.
When everyone's Googling these things, what do they find?
What are the seafood guide?
Well, the one thing that everybody keeps asking, I see it over and over, people want to know, do you get drunk faster because it's like bubbles and alcohol?
That's all I care about.

All right, so, in your personal experience, have you gotten intoxicated with these more rapidly?
In my head, I think I have.
Just because the bubbles just, like, go through your head faster.
I don't know.
There was someone who did a research project on this.
They did a small paper, and they showed that the bubbles do seem to get the alcohol into your bloodstream at a faster rate.
So it's not the total amount of alcohol, it's how fast it hits your body.
I believe him.
I don't know.
It's actually a research paper, but you have anecdotal evidence yourself.
Well, you know, it's probably because they're so flavorful and good, you might over-consume them every now and then.

Today, fast food confessions caught on tape with real fast food employees stepping forward to reveal what they've seen and heard from the fast food front lines.
Take a look.
Fast food employees gone bad.
An employee at a Detroit pizzeria was caught adding his own spit to the customer's pizza sauce.
In West Virginia, this fast food pizzeria manager was caught urinating into the kitchen sink, right next to where your food is prepared.
And this is not an isolated incident.
This fast food worker was filmed through the drive-thru window, urinating into a mop bucket used to clean the restaurant floors.
No five-second rule for your french fry.
What if the employee at this fast food restaurant was rubbing your bun on the floor?
Let's hope they didn't clean those floors using the other guy's mop.
But for every bad fast food employee, there are thousands more doing the right thing, using their cell phones to be our eyes and ears, capturing unsanitary conditions in picture and video.
One whistleblower, a former employee of a Florida fast food chain, made headlines when she alerted health officials who found the restaurant to be overrun by cockroaches and rat feces.
These are the actual shocking photos taken.
And you won't believe this video of a baby rat crawling around in the bun bag at an Oklahoma burger joint.
Today, we're hearing firsthand from fast food restaurant employees who've seen it all.
Jamie is our go-to tester, Renata, who admits to me she has visited a fast food restaurant, ordained her, too.
So you saw that footage.
What is going on to you right now?
That was disgusting!
It's terrible.
That was nasty!
Absolutely disgusting.
I want to highlight to you and everybody else that this is not the norm, right?
I'm sorry.
Most of the time it's just fine, so I don't want you to panic, but...
To help ease our fears, because it does obviously happen, we caught it on tape, we've brought in the most informed person I can think of.
The health inspector extraordinaire, Peter DeLucius here, to pay attention.
Rats, bugs, vermin, oh my, say it ain't so.
But our fast food restaurants, are they overrun with these guys?
When you go out and inspect restaurants, are you seeing rats and mice?
Ooh!
Cockroaches!
I tell you, Dr. Oz, you know what?
I don't think it's any more than what we've seen in the past.
The new thing, though, the advent, is everybody's carrying around a cell phone.
Cockroaches are one thing.
They lead to us, as inspectors, we know it's a dirty restaurant, it's unkept, you know what I mean?
But when we see rodents, Road into the scariest thing here, because these little guys, when they run around, they're urinating, they carry communicable diseases.
These are guys that are gonna really make you sick.
So this is something, when we see this in a restaurant, it's a closure.
We have to close them.
Will they get away if I open this up?
My goodness, all right.
So here's our first fast food employee confession, revealing what he says was a hidden ingredient in the kitchen of the burger joint that he worked in.
You're not gonna believe these.
I worked in fast food for many years when I was younger.
I'm sure they were committing OSHA violations and health violations during that time.
And frankly it was just disgusting.
They were doing a renovation to the entire store.
They remained open during that time so we were still serving food to the general public.
So, you know, you would have guys over here with jackhammers and tearing out walls and the ceilings were being replaced and so on and so forth while we had meat on the grill and fries over here and still serving food as normal.
Nice and dirty.
Those are buns.
That's black mold.
Wow.
This is nasty.
You've been inspecting restaurants and other eateries for your whole life.
So if you saw the kinds of things we're talking about, the dust, for example, wouldn't the health inspector pick it up?
Those are violations, without a doubt.
But remember, we only take a snapshot.
We're not in those stores, you know, 365 days a year.
We're in there a couple of times a year.
So these things happen.
But construction, while you're preparing food, that's a big no-no.
You're getting the, you know, particles in your food, contaminating, really big problem.
Can't have that.
Aren't there general safeguards to keep fast food restaurants safe?
There are.
You know, first and foremost is the inspection process.
So we're out there.
Hopefully, you know, that's a deterrent that if we do catch them, they could get a fine, they could be closed down.
A lot of states require food service and education, which is very important.
I'm going to sign Renatha up for that inspection course.
All right, so what are the signs we should be looking for to differentiate a good joint from a bad joint so we can enjoy our food?
I want Renatha panicked over this.
A couple of quick tips.
You know, first and foremost, a clean bathroom.
Because you know what?
In many places, the bathroom you use is the same bathroom the people preparing your food are using.
Now, second, you want an open style kitchen.
Why does that matter?
Open style kitchen.
Think about it.
You're at a fast food restaurant or a food court.
You can see what's going on there.
Are they wearing plastic gloves before they're touching your food there?
And you know what else I like?
I like cook to order.
A lot of these burger joints now you can go to.
You see them cooking your burgers right out there.
You see the operation.
You know what's going on.
And they know you're watching them.
All right, but the big lesson here isn't that fast food is going anywhere, because it's not, right?
These things are possible.
Hopefully, they're not happening.
They're unusual occurrences, but they obviously do occur.
So don't be afraid, but keep your eyes open and look.

But here's the question, since we've got all these delivery folks here.
Does convenience come with a cost, right?
You're sitting here watching a show and the food's already here.
Let's say these are the last eight deliveries you guys have all taken at home, right?
Please, two of you, step forward.
Statistically, two of your orders could have been snacked on before getting delivered.
Think about that.
Oh my god, that's right.
The exercise shows what real delivery workers admitted to in a recent survey.
28% of food delivery people tasted your food before delivering it.
Take a look.
Is someone dipping into your delivery order before it reaches your doorstep?
Here, a delivery man is caught on tape stealing fries from a customer's bag while standing at their doorstep.
Talk about risky.
This doorbell footage shows a delivery worker taking a sip from the customer's drink just seconds before handing it off.
It gets worse.
This man was arrested and charged with a felony for tainting the food in the grossest way possible, dipping his genitals into the customer's salsa as a reaction to receiving a low tip.
He even laughed in front of the judge during his trial.
Hope you don't think of this the next time you order takeout.
It gives double dipping a whole new meaning, doesn't it?
Folks, folks, tip your drivers.
You're better off.

We got Health Inspector Peter Lucius back to break down the other side of the delivery process.
So what do we need to know before we swipe and order our foods on our delivery apps at mealtime?
It's a whole new realm, right?
What I like to do is take a look for the health inspection to see that it's a reputable restaurant, but then take a look at the delivery app stuff to see if there's some poor ratings.
But then if you see consistency in complaints, stay away.
So it just seems so crazily confusing.
Aren't there rules that protect us in the delivery process?
Not right now.
It's like the Wild West out there.
There's no rules.
You don't know what's going on once that food leaves the restaurant.
The restaurant doesn't necessarily know what's going on with that food.
I'm going to culinary school.
That's what I'm doing, okay?
I'm going to chef it up in my house.
That's what I'm going to do.
Here's our next confession.
It's from a food delivery worker who says some drivers are definitely stealing their customers' food.
They asked to remain anonymous for obvious reasons.
He was putting a bunch of burritos into a big insulated bag, and some plates, some platters of stuff, and you know, two big insulated bags.
He was putting stuff in, and he had a big bag of tortilla chips.
And he reaches in and pulls out like three, and eats the tortilla chips.
And I thought to myself, I thought, okay, maybe the restaurant knows this guy, and maybe they just gave it to him as like a snack, because they know him for free.
After he ate the chips with his bare hands, Close the bag and he put it into his insulated bag with the rest of the order.
So that tells me that wasn't his personal bag of chips they gave him.
That was part of the order and he picked it up and he ate it.
Wow.
I mean, you'd never be able to figure that out, or so I thought.
But guess what?
Do not fear.
Peter has tips to protect you from dirty delivery.
And the first tip is pretty simple.
He wants to look for a staple.
Real simple.
You know what?
And you can call the restaurant, too, and say, I want my bag stapled shut.
Take a look at this.
You get a bag like this.
It's crinkled.
You don't know if anybody could go in there, grab, take those tasty fries out, whatever, grab the nacho chips and take a snack.
So at least you got your bag stapled.
You have some sense of security It was not tampered with between a restaurant and your home.
Simple, easy, elegant.
Easy.
This is, I think, mandatory.
The staple tip.
Yeah, ask for it.
So before we go, you have one more thing you want to warn us about, which are these so-called ghost restaurants.
Please explain what they are to everybody, and then let's talk about why they're a problem.
It's a whole new phenomenon now.
People, you know, they're trying to think of new things that come outside the box.
Let me do something different.
And they decide to do these internet-only restaurants, where you go on the internet, you order your food, And it comes to you, but where is it being prepared?
Is it being prepared in a warehouse?
Is it in someone's home kitchen?
So I tell you, I want to make sure anywhere I eat is regulated and has a permit.
At least that's one sense of security that you could have.

I say it again, dirty keto.
What do you mean by that word?
Well, Dr. Oz, obviously she's eating nothing but fatty items like bacon, like hamburgers, like sausages.
I don't think they're turkey and I don't think they're lean.
Granted, I know that there's some great, you know, side effects or what have you, but I don't think it's healthy.
Just saying.
Now you did keto yourself, if I understand correctly.
Correct.
What were the results when you tried it?
Well, she thinks I'm jealous, but I'm not because I lost almost 75 pounds in like two months.
Oh.
Even though I looked great and I felt great, I developed a condition by the name of syncope, where I would pass out.
And I'm pretty sure you've heard of it.
I have.
If others haven't.
And it was the scariest experience, literally.
I was getting rushed to the emergency room in an ambulance because nobody knew what was wrong with me.
And you're a really good doctor, so you would know more.
Please, no pandering to the judge.
So Defender, let me give you a chance now.
Why did you decide to start with this high fat dog?
You saw your friend's experience.
Was that a good or bad thing in your opinion?
I wanted to lose weight.
I don't, her experience is her experience.
My body's different than hers, but I don't even believe her entire story, so.
Which parts don't you believe?
That she, I mean, I think she did lose, I don't think it was 70 pounds, maybe like 40 pounds or something.
It's just, it worked for me.
It really does work.
Like I do it every day.
Are you taking your friends' concerns into consideration, even if it's helping you lose weight?
How much weight have you lost, by the way?
I've lost 20 pounds.
20 pounds.
Yeah.

I guess.
Sometimes, but I just feel like we were on this journey together, and now, you know, it's good when you have somebody with you doing it.
And now, I thought it was jealousy, really, I thought it was, but I didn't even see any, like, documents saying that she got this other sickness or whatever, so that's why I didn't believe it.
Well, I'm running into a bit of a brick wall here.
Is jealousy part of this?
Definitely not doctor, or judge, or however you would like me to call you.
Judge, doctor, we work.
Okay, very good.
Right.
So, definitely not jealousy, because again, this is a real serious situation.
So these are legitimate, and I can actually get witnesses, eyewitnesses, and you know, doctor's reports, and everything, because they labeled it syncope.
Well, I can say from the defendant's visual reaction, Oh, did I have a visual reaction?
Yes, you did, girl.
Oh, I apologize.
Okay.
Yes.
Well, I'm gonna call out an expert, an expert witness to help decide this case to get to the bottom of what's really happening is a celebrity fitness trainer and New York Times bestselling author, Jorge Cruz.
He's here, and he's bringing Exhibit A. Jorge, please enter the evidence.
He's bringing in food.
He's bringing in food.
What are you entering into evidence here, Jorge?
This is what the defendant is eating, TK. And, you know, I see a lot of fat, obviously, and healthy protein.
This is a typical day of the defendant's meal.
Yep, and there's good and bad fat, Dr. Oz.
There's avocados, there's eggs, the yolks are good, the cheese, but then we've got things that are processed, you know, with, I hate to say it, hormones, like the bacon, possibly, and definitely burgers.
I can tell that these burgers are more fast food burgers, possibly, TK, maybe.
And so there's a variety of things here, but this is what she's doing on a typical day.
All right, so your defendant, this is typical.
Good fats and bad fats, you agree?
I agree, except I don't eat that much cheese.
Okay, okay.
Okay, and not as much bacon.
Plaintiff, you agree this is what she's eating?
I agree.
Would you consider this dirty keto, which is the primary reason this case was raised?
We have a chart, Dr. Oz, and there's a clean keto and a dirty keto, I would say yes, because unfortunately...
I'm sorry, it's yes, dirty?
Yes, yes, it's a dirty keto.
So explain this chart to me.
So typical keto, regular keto, has more of your fats coming from avocados and these healthy fats, olive oil, healthy nuts.
We don't see enough of that here.
And unfortunately, what she's doing is more dirty because the meat is more processed, they're more nitrates.
So I would say there's a balance here and it is dirty, unfortunately.
So the plaintiff is arguing that this diet is bad for the defense's health.
Do you have any evidence that could help you undeniably decide this case to help me?
I have something for you, Dr. Oz.
Some blood work.
Blood work.
Uh oh.
Oh God.
Oh Jesus.
I've got lots of evidence, and the defense argues she has evidence, that will sway my verdict enough to vote on the side of that tray of food.
Is it possible?
Could it be true?

Today I'm presiding over a case of dirty keto coming between friends.
The plaintiff, Anaya, says her friend, TK, needs to quit eating high-fat foods like bacon on her keto diet because she's worried it's hurting her health.
The defense, TK, argues she's lost 20 pounds and she will not turn back.
Best-selling author and celebrity trainer, Jorge Cruz, is our expert witness.
Eating high fat foods regularly all the time is frowned upon.
But you argue there's a biological loophole.
What is it?
There is, Dr. Oz.
Well, keto is ketosis and ketosis is the loophole.
And you know, I work with a lot of clients and I teach healthy fats in the morning and coffee and things like that.
And there's a way to do it.
And really, we have a graph to show people how keto activates fat burning.
So imagine you have bacon.
I would say let's make that an avocado, but let's just say it's healthy fat, hopefully.
It activates a fat burning mechanism, and you can talk about this as well, Dr. Oz, but we know that it does that, and best of all, when you deprive yourself of sugar and carbs, it's gonna tap into that fat you're eating, but also the fat that you have on your body, like on the hips and belly.
And that's why it works so well in using up energy in our body.
So as long as you're in ketosis, Right?
Your body is burning fat, your hormones have been hacked a little bit, and so you'll get what you desire.
That's the argument.
Defendant, you have to be in ketosis for it to work.
Do you have any evidence that you're actually in ketosis?
Bam.
Bam?
Hello.
So that's your urine strip?
Yes.
I came ready.
Oh?
Yes, and it changed the color indicating that you are ketotic.

Plaintiff, she does appear to be in ketosis.
Well, like she said, I don't have any documentations that that's real, so.
Well, I'm assuming it was your urine you dipped it in, correct?
Yes.
So, if you're a ketosis, that means that you're doing exactly what Jorge described, the fats being converted, and this bill product, the byproduct is ketones, which is what we identify in the urine.
But that doesn't settle the case yet.
That just means that you're using the diet for the desired purpose, which is losing weight, but you lost 20 pounds.
Yes.
So we know that part of it works.
But the plaintiff's a friend.
And the court has to enter that insight as a friendly plaintiff.
She's arguing that her friend's health, you, your health, is at risk.
So therefore, we've asked you to take the big step of getting blood work.

There are several ways where the high fat diet can affect your health adversely.
Number one, your liver, because your liver is like the filter of the body.
It's gotta take all that junk, in this case the bacon, and clear it out so that the rest of the ketosis can play a role.
And your liver enzymes, which indicate the health of your liver, are normal.
They're normal.
But there's more.
Your overall cholesterol, which matters to me, because if you're eating a lot of fat, as Jorge pointed out here, it can sometimes affect your cholesterol levels adversely, and yours are normal.
And finally, I looked at the most important cholesterol number, which is the lousy LDL cholesterol, the one that gives us a risk for heart disease and stroke and Alzheimer's and a bunch of things.
And your LDL, the bad cholesterol, Well, it's just a little bit elevated.
Not far, but it's a little elevated.
What does that mean?
Well, what it means, and you know what, I'm gonna address that in my final ruling, because here's how I see it, putting the whole story together.
You're in ketosis, there's a concern over your health that's been raised by a plaintiff, and so as I look at your lab results and put it all together, I can prepare a final judgment that I think will rule on the side of health, and the test results that I have here, I'm gonna rule in favor of the defendant.
But.

There's an important issue here, a caveat.
High-fat diets can, without question, be healthy if it helps you lose weight and you're eating the right kinds of fats and you're exercising and you're monitoring the effects on your body, as we did with these records.
However, I hereby order you To reduce the amount of saturated fat and eat healthier fats.
Dirty keto is not the way to go.
I want olive oil and avocados and nuts to get that LDL level down.

Which will keep you in ketosis and make it easier on your heart.

My name is Dalene Santana.
I'm a mental health advocate, spoken word artist, and I live with bipolar 1 disorder.
I decided to come out of my bipolar closet about a year ago after I had a manic episode in 2011. I reached psychosis, was hospitalized, and came home.
Fell into the deepest depression and really hit rock bottom.
I decided I would never talk about my illness, definitely never write poetry again and that bred a lot of problems.
It made me so much more anxious and depressed and I felt so much more alone in my struggles with my mental illness.
Now my story is that I really want to inspire others with my poetry and just Speaking out and helping and educating others, but I can't help others unless I help myself.
I'm really grateful that I got the opportunity to share my story with you, and I look forward to hearing from you.
